A blend of 50% Chardonnay (1/3 of Chardonnay Muscate) and 50% Pinot Noir, the Empreintes Millésime 2017, was fermented in aged Burgundy barrels with regular lees stirring and finished with a two to four grams per liter dosage. Complex and layered, it is brimming with delicate, oxidative notes of crisp, ripe apple, apricot, morello cherry, butter pastry, nougat, and acacia honey notes that lead into a medium to full-bodied, plush-fruited palate with fine threads of incisive acidity and chiseled minerality. Fresh and full of finesse, it finishes long with a chalky grip.

The 2017 Extra Brut Les Empreintes, an equal blend of Chardonnay and Pinot Noir, is impressive. Lemon confit, white flowers, mint and white pepper are all nicely amplified. This rich, potent Champagne delivers the goods. It is an especially fine effort in a very challenging year and one of the standouts in this range. Dosage is 4 grams per liter.

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
